In this land, emblem of our civilization and always suited to viticulture, forged by the work of three generations of passionate farmers, an elegant and persistent wine is born, to which the volcanic soil gives pleasant notes of minerality.

Wine processing
- Vinificazione: Manual harvest in perforated boxes of 15 kg each. Soft pressing of the whole grapes and selection of the different fractions of must. Static clarification for 24 hours and subsequent inoculation of selected yeasts
- Aging: in stainless steel sur lise and weekly suspension of the lees.
- Fermentation: alcoholic at a temperature of 16-18°C (about two weeks).
- Assembly and bottling: in the first months of the year following the harvest
Characteristic
- Colour: Net, clear. Straw yellow with greenish reflections
- Bouquet: The nose is fresh, clean, intense and elegant. | perfumes refer to citrus notes, in particular orange blossom, cedar, chamomile. The minerality, typical of the Castelli Romani area, is clear and pleasant
- Taste: The taste is decidedly dry, the elegance between the softness and freshness is remarkable. The minerality perceived on the nose translates into a gustatory sapidity on the palate. The result is an intense, elegant and complex wine
- Pairing: Excellent throughout the meal, especially with aperitifs and fish-based dishes.
