Vinification: Following careful selection, the grapes undergo soft pressing. The must is then fermented at a controlled temperature.
Characteristic
Organoleptic Characteristic: Straw yellow in colour, with nuances of green that anticipate its fresh taste, the aroma is rounded with marked notes of kernelled fruits, such as apricot and white peach, white flowers, fresh bread and dried fruits in the aftertaste. On the palate it surprises with its roundness and softness, immediately followed by the freshness and the acidic notes, unusual for a historical vineyard, but typical of the terroir.
Pairings: It goes perfectly with a range of risottos (seafood, with saffron or vegetables) and with fish dishes that foresee a sauce.
