Wine processing

  • Vinification: Manual harvest in perforated boxes of 15 kg each. Brief contact of the must with the pomace inside the soft press until the desired shade is obtained. Soft pressing and selection of the different fractions of must. Static clarification for 24 hours and subsequent inoculation of selected yeasts.

  • Aging: in stainless steel sur lise and weekly suspension of the lees. Assembly and bottling in the first months of the year following the harvest

  • Fermentaton: alcoholic at a temperature of 13°C (about three weeks).

Characteristic

  • Colour: Net, clear. Soft pink

  • Bouquet: Pleasant perceptions of freshness and youth. In particular, notes of rose, pomegranate, strawberry and cherry. Intense and delicate

  • Taste: The wine is characterized by an exquisite acidity which bears witness to its pleasant freshness and sapidity. Excellent aromatic persistence and final taste. A modern and elegant wine, which leaves the palate clean with every sip

  • Pairings: Excellent with aperitifs and shellfish in general.
