  • Grapes: Petit Rouge 75% e 10% Fumin, 10% Cornalin e 5% Premetta

  • Soil: Very sandy, slightly calcareous, really dry and with steep slope (> 70%)

  • Farming operations: Both mechanical and manual, with techniques allowed in the organic farming. No use of insecticides, nor acaricides, and not even chemical weeding are performed. Manuring is performed just with organic substances (manure)

  • Harvesting: Middle of October

Wine processing

  • Vinification: With destemmed grapes, and no yeast added. Maceration with skin for 12/15 days pumping over three times a day at controlled temperature

  • Aging refinement: In 3000 liter wooden vats, 6/12 months in the bottle

  • Bottling: September

Characteristic

  • Colour: Ruby colour, intense and luminous

  • Perfume: Intense bouquet brings to mind ripe wild berrieswith sweet floral hints of violet and wild rosewhich are followed by sweet spicy notes

  • Flavor: It opens up its fruity bouquet, which becomes stronger thanks to the mineral note ; its light acidity blends with the tannins

  • At table: It accompanies dishes prepared with red meat and meat from farmyard animals
