Production area: Grapes from a small parcel of very old vines – some of which are even a hundred years old – selected in the Pasquari area, in the city of Mezzolombardo in the heart of the Dolomites

Training method: Traditional Trentino double pergola. Old vines
Vinification and refinement: After rigorous selection in the vineyard, with a proportion of whole bunches, selected according to the ripeness of the stems. It ferments in uncovered tonneaux.
It is racked directly into barriques where take place the malolactic fermentation and there remains for 18 months. A further period in the bottle of one year is made to give it balance.
Tasting notes: Rich and elegant wine, complex bouquet of red fruit with a tendency to jam. Spicy vein very present
