  • Vinification: Alcoholic fermentation in stainless steel tanks at controlled temperature with maceration on the skins for about 25 days. Malolactic fermentation in stainless steel. Aging in first passage barriques for at least 12 months and a further 21 months in steel at a controlled temperature. It completes the aging in the bottle for at least 4 months

Characteristic

  • Colour: Intense ruby red, with purple shades and a great density

  • Perfume: The nose shows its power immediately with balsamic notes and ripe red fruits. A fine spiciness and tertiary notes of leather give an intriguing finish

  • Taste: In the mouth there is the typical expression of this autochthonous grape: enveloping tannins, structure and acidity, all combined in an excellent pleasantness in the drink

  • Food pairings: Perfect together with aged goat cheeses, rich legume soups with herbs and pork, such as lentils and cotechino or a mixed soup with crumbled sausage and truffle. Rich meat-based dishes such as stewed boar, braised veal cheek or lamb roulade

  • Serving temperature: 18-20 degrees
