  • Agricultural practices: From pruning to grape harvest, we mostly work by hand in our vineyards. We only use mechanical machines for treatments and for extirpating bad seeds

Wine processing

  • Vinification: Traditional method including temperature check during the alcoholic fermentation in steel tanks

  • Aging: At least 6 months in steel tanks

  • Bottling: April-May

Characteristic

  • Colour: Ruby red

  • Fragrances: Fresh scents like red fruit such as strawberries and plums. Floral aroma of roses and violets

  • How does it taste: Cornalin has its roots in Jovençan. That’s why it presents the typical characteristics of Valle d’Aosta territory: natural acidity, freshness, surprising sapidity and minerality. Fruit, pepper, and cloves complete its taste

  • At the table: Great for first courses and with both white and red meat
