The Chefs, Claudio Sirito, known as “il Cocco” and Sergio Vespi, are a “historical” point of reference in the cuisine of our territory: Acquese and Basso Monferrato.
Both create appetizing dishes from the Piedmontese tradition and from nearby Liguria, with a few hints of innovation based on the seasons and their fruits. Great attention to raw materials, used, whenever possible, according to availability in the area. Wines: over 200 labels from Piedmont and other Italian Regions; small selections of French, German, Austrian and a lot of passion for small Champagne producers.
