Regional specialties such as excellent beef, mushrooms, truffles and vegetables are enhanced; but it is also given space to the pleasure of the Piedmontese taste that looks out to the sea behind the hills and so raw fish and crustaceans, stews and fresh fish. Large cellar with over a thousand references. Attention to local wines, from Barolo to the great dolcetto, but also to the ones from beyond the Alps. A great choice of champagne. Selection of small producers with a preference for rusticity. A place of respect for organic wines and in the north east, the Karst, Collio and Slovenia.
